Abstract

ANALISIS RANTAI PASOK PRODUK CAKUL CRISPY DI KECAMATAN PAGUYANGAN KABUPATEN BREBES Dinda Maitsaa Insyiroh Manajemen Logistik ABSTRAK UMKM Asifa adalah salah satu UMKM yang berada di Kecamatan Paguyangan, Kabupaten Brebes yang memproduksi cakul crispy. Dalam proses produksi cakul crispy, nelayan merupakan pihak yang menyediakan bahan baku utama berupa ikan wader. Namun, nelayan belum bisa memenuhi target dari UMKM Asifa yang berakibat pada menurunnya kinerja rantai pasok. Maka dilakukanlah analisis rantai pasok dan pengukuran kinerja rantai pasok produk cakul crispy. Metode yang digunakan adalah Food Supply Chain Management (FSCN) dan Supply Chain Operations References (SCOR). Hasil penelitian ditemukan proses rantai pasok meliputi struktur jaringan, proses bisnis rantai pasok, manajemen jaringan dan rantai pasok, dan sumber daya rantai pasok serta perhitungan kinerja pemenuhan suppliersebesar 69,7%, pemenuhan permintaan produk cakul crispy sebesar 62,9%, pemenuhan return produk sebesar 100%, waktu cash to cash selama 2 hari dan waktu dari perencanaan hingga produk sampai ke konsumen selama 11 hari. Kata kunci : kinerja, rantai pasok, food supply chain management (FSCN), supply chain operations references (SCOR) ABSTRACT Asifa MSMEs are one of the MSMEs located in Paguyangan District, Brebes Regency that produces crispy cakul. In the crispy cakul production process, fishermen are the ones who provide the main raw material in the form of wader fish. However, fishermen have not been able to meet the target of Asifa MSMEs which has resulted in decreased supply chain performance. Therefore, supply chain analysis and supply chain performance measurement of crispy cakul products are carried out. The methods used are Food Supply Chain Management (FSCN) and Supply Chain Operations References (SCOR). The results of the study found that the supply chain process includes network structure, supply chain business processes, network and supply chain management, and supply chain resources as well as the calculation of supplier fulfillment performance by 69.7%, fulfillment of demand for crispy cakul products by 62.9%, fulfillment of product return by 100%, cash to cash time for 2 days and time from planning to product to consumer for 11 days.
